Loving Life!

I am officially 26 weeks today! Our little girl has been getting bigger and bigger everyday. She has become quite the little ballerina or soccer player. Her kicks have become more and more intense as the days go on. Andy and I can't wait for her to get her at the end of July!

 My belly seems huge to me already even though I still have 3 1/2 months to do.

On another note can I just say how much I love Andy and how amazing he is! Not only is he a great father and husband, he was in school this past semester and got straight A's. Yep that's right, a 4.0 in his second to last Semester!! I am so Proud!

Anniversary Trip: Midway Utah


For our Anniversary this year Andy and I decided to go on a trip. We decided to go to Midway Utah. We stayed in the World Mark condos there. It was a fun little town that looks like a little Swiss community. Most of the houses and shops are modeled after Swiss architecture.

We drove down Sunday afternoon and enjoyed a relaxing evening in our condo. On Monday we went over to the Homestead and walked around. We went and toured the Homestead crater. It is the only indoor place for scuba diving in the world. The water stays at about 95 degrees year round and the crater is 65 feet deep. The water was so beautiful, very clear and blue. We also went for ice cream at the local creamery and rode on the Heber Valley Railroad in the evening.




On Tuesday we drove to Park City, which was about 20 minutes away. Before we left for Park City, we stopped and had breakfast at Kneaders. It was So Yummy. It was my first time eating there. We went shopping at the Tanger outlets. Scored .97 cent pants for Katelyn and a couple of shirts for myself. After we got done shopping we drove over to the Utah Olympic Park. This is where, in the 2002 winter Olympics, the ski jumping, bobsled and luge events took place.They have a museum that you can walk around to see different memorabilia from the Olympic games.

On Wednesday we went down to the Provo/Orem area. We took Andy's brother, Conner, out for lunch at Olive Garden. It was SO YUMMY!!! We also went to the University Mall and the Burlington Coat Factory. We decided to drive and go walk through IKEA. We both love IKEA and had a great time.

Thursday we enjoyed our last kid free morning to sleep in and then packed up and got on the road to drive home. We missed Katelyn so much, who had stayed home with my mom!

Three years

Today is Andy and I's third anniversary. It has been the best three years of our lives. In the past three years we have moved 6 times, lived in two different states and three cities. We have one kiddo and one on the way. One bachelors degree and the other almost done! We laughed and cried a lot of different times. We have loved every minute of it and our love for each other has grown more and more each day. Happy anniversary to my best friend! Love you oh so much!

French Onion Pasta

Oh my goodness! This recipe is to amazing not to share. I made this last night and it was delicious. Everyone loved it, even Katelyn.

Ingredients:

2 cups of uncooked penne pasta
1 to 1.5 cup of chicken stock
1 packet of Lipton's Onion Soup mix
1 shallot, finely diced
2 cloves of garlic, smashed
1/2 cup of marsala wine
4 tablespoons of light cream
1 tablespoon of flour
1/4 cup of shredded mozzarella cheese
1 tablespoon of EVOO

Directions-
1- Cook pasta according to directions, set aside and keep warm.
2- In a saucepan, heat the EVOO. Add the scallions and garlic, stir continually until soft and fragrant.
3- Add the marsala wine, scraping the bottom of the pan to remove any stuck on pieces of onion.
4- Add the stock and soup mix packets, allow to cook on low for about 20 minutes.
5- Stir in flour, whisking continually until well incorporated and thickened.
6- Add the light cream, mix well.
7- Add the pasta to the sauce, stir well.
8- Pour into an oven safe dish. Top with the mozzarella cheese.
9- Set it under the broiler until the cheese gets a little crispy.

Doesn't it look yummy!! I did change the recipe a little bit. Instead of using wine, I used chicken broth. I also added sliced mushrooms before adding the cream. I didn't have light cream on hand so I used the same amount of milk plus about a 1/2 tablespoon of butter.

Mommy Thoughts

I have recently been thinking about how much time I spend on Pinterest (anyone else addicted) and how many cute, useful and yummy Ideas I find on there everyday. I have so many different sewing, craft and cooking ideas that I want to try saved to my boards. Have I actually attempted to spend a little less time on pinterest and make some of these things...NO!! I have been trying to find a way to get myself motivated to actually be crafty again.

I think I have actually come up with a solution. I am going to start another blog dedicated to doing all of the lovely little pins I have on Pinterest. Each week I will pick 2-3 different projects or recipes to do and update on the blog how its going. I will post the developing projects and the finish product. I will also give my opinions on what helped me and hopefully so of you readers will want to do the project too.

What do you think? Does that sound like a good idea? Would you actually read it?

On another note, I have been doing some research to see if I could spend a little less money on diapers. We spend quite a bit on diapers and I am worried about having to buy two different sizes of diapers pretty soon. I stumbled upon Diapers.com. I have been hearing friends and bloggers talk about how much they love the site and thought I should check it out as well. I figured out what we were paying per diaper at target and it came out to .19 cents a diaper. I found that diapers.com has pretty comparable prices for the name brand diapers and also they have coupon codes that you can get 10 dollars off your order right now. I went ahead and ordered a box of diapers for the same price as what we are paying now at Target with free shipping. I think that its a great deal! I didn't have to spend money on gas to drive the 30 minutes it takes to get to target.

I also did some research on baby size 1 diapers and was amazed at what I found. I figured out that if we were to continue buying our diapers at target, like we always have, we would pay about 18 cents a diaper. I found out that for most of the diapers on diapers.com for size one are 16 cents or less a diaper. That's a pretty big savings when you are buying 250 plus diapers in a box. Then I applied one of the coupon codes I had and it took 10 dollars off the price, that makes the diapers 11 cents each. Awesome.I think I will be ordering my diapers from now on and you can't beat free shipping!!
